CAFE COFFEE 2 - BUILDING ON THE BASICS
This course is offered in conjunction with the School of Hospitality, Otago Polytechnic. This course is for students who have already completed one of our Cafe Coffee courses. This is an opportunity for you to enchance your skills with an in-depth knowledge of milk and coffee extraction as well as technique. The course will take you to the next level by giving you more exposure to the espresso machine.

CAFE COFFEE MAKING
This course is offered in conjunction with the School of Hospitality, Otago Polytechnic. In this course you will gain a basic understanding of espresso coffee. Specifically, you will: Learn to identify the main bean types and the countries that they are grown in. Cover a brief history of coffee. Identify and understand the basic coffee types. Stretch and texturise milk in an appropriate manner for each coffee. Understand the quality indicators of good coffee extraction. Gain a basic understanding of machine components and general maintenance.

EUROPEAN COOKING
Discover some of the flavours of Europe. This course takes a whistle stop in France, Portugal, Czech Republic / Slovakia, and Hungary (one class on each cuisine). The recipes have been designed for the student budget and with a home kitchen in mind. Instructor Zuzana Blazova Tichy was brought up in Slovakia, and has a passion for cooking food and for passing these skills on to others. Join us for a fun filled evening. The course involves cooking in groups and eating a meal at the end of each class.

INDIAN COOKING
In this course you will learn how to make delicious vegetarian and meat dishes that are: Easy and simple to cook. Free from artificial flavours and preservatives and easy to digest. Along with this you will learn: To synchronise accordingly with cooking techniques. About various spices, their aromatic taste, smell and fragrances, and different methods of using them. The names of different ingredients (to make it easier to buy ingredients in future). About different types of Indian breads and their combination with different curries. Some uncooked sweets and savoury snacks are also included.

ITALIAN COOKING
This course covers the basics of Italian and Sicilian traditional cooking, including making yummy appetizers, most popular pasta topping sauces, handmade gnocchi pasta, handmade pizza, the delicious Tiramisu, and many more other recipes! You will actively cook and have a taste of all the fantastic recipes you will make together.

NZ CRAFT BEER TASTING
During an evening in front of the open fire of the Cottage Lounge , you'll enjoy a selection of craft-brewed beers from across NZ. Host 'Tom the Pom', ex Emersons and Green Man Breweries will introduce you to a range of styles and producers. Note: You MUST be at least eighteen years of age to enrol in this class. WINE MAKING
During this course you will be led through the wine-making process by a winemaker and you will get to make a quantity of wine. At the completion of the course you will receive two or three bottles of this wine to take home and enjoy.

WINE TASTING - AUTUMN
Whether you are new in town or facing yet another yearly grind, this wine selection will bring treats to your taste buds. The idea is also to delight and brighten your spirit while gently learning and meeting others in a friendly and convivial atmosphere. I have assembled a selection of 8 to 10 whites and reds finishing off with a Port. There will also be some wine appropriate cheeses. Geoff Weston, Wine Maker. During this class we will compare wines from the two biggest wine growing areas in New Zealand - Hawkes Bay and Marlbourgh.
